Gluten Free Cornmeal Cake Recipe

Ingredients for making gluten-free cornmeal cake:

 2 cups of cornmeal (240 grams)

 2 cups of sugar (320 grams)

 1 American cup of whole milk (250 ml)

 ½ American cup of oil (125 ml)

 3 eggs

 3 tablespoons of rice flour

 1 tablespoon of baking powder

 1 teaspoon of fennel (optional)

How to make gluten-free cornmeal cake:

First, blend the liquid ingredients in a blender: milk, oil and eggs (whites and yolks). Then add the sugar and beat until the sugar grains dissolve.

Tip: If you want you can substitute whole milk for coconut milk.

Little by little add the cornmeal and rice flour, always beating. If you want, add the fennel to give it a special taste. When all the ingredients are well mixed, add the yeast and stir with a spoon.

Tip: If the blender mixture becomes too thick while adding the cornmeal and rice flour, mix a little with a spoon.

Pour the batter of this fluffy rice cornmeal cake into a greased and sprinkled tin and bake in a preheated oven at 180ÂșC for approximately 40 minutes - use the toothpick test to confirm it is ready.
